Grilling 101: A Crash Course in Culinary Courage
As I stepped into the unfamiliar world of grilling, I couldn’t help but feel a sense of trepidation. With my in-laws and family gathered around, I had volunteered to whip up an Instagram-inspired smashed potato salad for dinner. Little did I know, I was about to embark on a culinary adventure that would push me out of my comfort zone.
The Unlikely Hero
With leftover hot dogs and burgers from the week, I assumed my brother-in-law, Joe, would take charge of the grill. But when I woke up to find out he was leaving to pick up the family dog and had classes that night, I was left to fend for myself. My oven-baked burgers, which had received rave reviews from my nuclear family, were suddenly deemed unacceptable. The pressure was on to grill, and I was forced to take the leap.
Into the Unknown
As a self-proclaimed non-grill expert, I was venturing into uncharted territory. The propane grill, which I had initially confused with a charcoal grill, was now staring me down. With a sense of urgency, I threw the burgers on the grill, only to be met with an uncomfortable amount of smoke 90 seconds in. Thanks to a timely tip from Chef Donny, I closed the lid and let the magic happen.

Four minutes in, I flipped the burgers and added cheese for an extra minute before serving. The hot dogs, which seemed like a breeze, were next. Despite some initial jitters, the final product looked surprisingly good.
